However, some pickups are set on an angle.

It's funny, how many people wanted a Hendrix Strat for right handed players. You know Jimi used a right handed Strat upside down. He just reversed the strings and intonation at the bridge. But one of the reasons for his unique tone was the pickup angle. So right handed players wanted a left handed Strat setup for right hand. :D

I think if you turn them around you mess up the phase. Plus, with humbuckers especially, you turn them around and the pole pieces would be under the wrong node of the string. It would sound different. For humbuckers, I don't think there are any lefty versions. With staggered-pole piece Fender single coils, I think I saw them somewhere, especially on the 'vintage' type or reissue guitars. The pole pieces on these are non adjustable so you wouldn't be able to screw them down or up to compensate. And, you can't just turn them around either because it would mess up the phase.

With most guitars though, it's not an issue, even with the adjustable ones because nowadays people don't bother to adjust them - which is too bad. :)
