It appeals to my sense of aesthetics though. You might also look to see of there's a surface on the bridge which the strings all press against. Then you could just fasten a bare wire or a thin metal rod across that.

Putting a capacitor (of the right value) between the strings and the rest of your wiring will protect you from some types of lethal shock.
I've actually done this on a friend's Epi John Lennon model. Hum was a big problem, even after we replaced the original pup with a Seymour Duncan stacked P90 (humbucking). To ground the strings, I used 3M copper tape from Stew-Mac. I cut and shaped this to fit onto the inside bridge plate so one edge was flush with the edges of the pin holes toward the neck. The shape of the copper tape included a tab to which I soldered a thin and very flexible, stranded wire. I soldered the other end of the ground wire to the common ground point (Volume pot body, IIRC). When installed, the strings' ball ends rested on the edge of the copper tape.

This did the job, improving the E-field interference resisitance, while the 'bucker did the same for the magnetic interference.

Improvements I would make if doing it again:

Add some light solder tinning to the edge of the tape where the ball ends contact. This would improve durability.

Maybe spray some conductive paint on the inside, around the pin holes and onto the copper tape to improve chances of contact.

Doing this takes patience -- good luck.

Interesting idea! You've obviously identified the root of the problem, now we just have to come up with a solution for you.

Electrically, there needs to be a way to connect the strings together and offer a ground point. As you said, without a metal bridge, that's a bit of a show-stopper.

My first thought, being the MacGyver type that I am, is to take some conductive paint - I don't know if you've ever seen it or not, usually found at auto parts stores and used to repair rear window defoggers - and ever-so-carefully paint a complete circuit inside/under the holes for your bridge pins. This would electrically connect the strings, and theoretically provide you with a ground point (after some extra fiddling, for sure.)

While that particular method may or may not work, I think the theory itself is sound. If you can find a fairly unobtrusive way to electrically bond the strings to one another, you can isolate them with a ground just like you would on a metal bridge electric. Doing it without significantly altering the tone of the guitar is the bigger problem...I have a few other similar ideas, but it would probably involve more lutherie and pain-in-the-rear-ness than you're looking for. :D
