Q) If I've written a progression of Dm-C-G and I use the D minor pent to solo over it, am I right in thinking that its is in the key of F/Dm not C/Am?

I'm getting confused as to what scales to use for the "solo"/lead fills.

I would say it's in D dorian, which is a mode of C/Am. It seems obvious that the center of the progression (and the soloing) is the d note, but at the same time from the chords we can see it has the notes of the A minor scale, not the D minor scale. (Specifically, the G chord has a "b", where the D minor scale has a "b flat".)
