My husband of 4 years loves me dearly, and loves buying me guitars! It's gotten to the point where I'm afraid to go to a music store with him. My wedding gift was a Taylor 12 string, followed shortly thereafter by a Tacoma acoustic electric cutaway.(nice guitar!) I have since received for Christmas last year a Hamer hollow body jazz guitar, a Gibson dobro as a welcome home when I went on vacation without him last year, a Dean electric 12 string,(just because I wanted it) and a Fender Telecaster. The Tele replaced an Epiphone Les Paul he had gotten me as my first electric, but it was just too heavy for me.
I say, if your wife wants you to have a new guitar, who are you to deprive her of the pleasure she'll get seeing you play it?
Go for it man, before she changes her mind, or some new home repair comes up and it's too late!

Now obviously as you said the Encore has to much sentimental value to get rid of, so if I were in your position what I would do would be to re-string the Encore for Nashville tuning and then by a nice cutaway acoustic/electric for standard 6 string use.

Richards uses Nashville tuning on one of the guitars in "Wild Horses":
strings 3 - 6 are tuned an octave higher, if I've got it right.

No matter how much or how little you spend on the guitar, make sure that there is enough left in your wallet for a meal and some flowers (for the wife, that is, not your new guitar!).
