It seems delicious! Perhaps orange marmalade? It is one of my favorite breakfast. And some pieces of fruit, usually bananas from Canary Islands, ham (if it is possible Spanish ham with natural tomato), some (French) cheese, yogurt... and you will be ready for a pincho de tortilla at 11am.

Ken, we say "salud" as Ricochet said or "a tu salud", "a su salud", "a vuestra salud", etc. Perhaps we even use more "chin-chin", I guess it comes from some French expression or perhaps it is an onomatopoeia of the sound that the glasses make when they are in contact.
Now, we usually drink coffee, usually with milk, and also orange juice, usually natural. Some people also drink just milk or put some kind of cacao in the milk and also tea or another infusion (chamomile, mint, etc.). And for the "pincho" there are two major alternatives: a Coke or a beer.
