OKAY Everyone here's my first attempt. The bridge was very hard for me, I almost left it out, but I knew you all could help with that! :) These keep getting harder for me.

An Acquired Taste - James Toffee

After all the years I don't know you Verse 1 Vic Lewis
I'm still trying to understand
it's both simple and complicated
can we finish what we began
rhyme has lost its reason
reason changes day to day
I can't quite put my finger on it
I'm never sure what I should say

You're an acquired Chorus 1 Chefie
and sometimes hard to swallow
an acquired taste
let's try again tomorrow
and see if we can work things out
and see if we can work things out

Don't know where we went wrong Verse 2 MPeeler3
We've been together for so long
You've got me feeling old and gray
But I don't want to give this all away
Rhyme has lost its reason
With the changing of the season
Just don't give up on us now
Can't we work it out somehow

Like a fine aged Scotch Bridge MPeeler3
A Cigar in a box
Or a deep red wine
We just need more time
Just a little more time

You're an acquired taste Chorus 2 Chefie
with a sly and acid wit
an acquired taste
that does and doesn't fit
An acquired taste
One I've grown accustomed to
An acquired taste
One that I just can't undo

Interesting. I've been working on my own "An Acquired Taste" and was just about to post it when I saw your version. Your version is obviously heading in a different direction than mine. It's really nice to see contrast, and yet, the similarities in our approach. I'll post my version outside of this thread, as I think it should be. But I really like what you've done with this.
